The Story Behind Andalas Reverb
This coffee comes from the Aceh region and the area surrounding Lake Toba in Sumatra, where smallholder farmers tend plots ranging from just 100 plants to a few acres. What makes Sumatran coffee distinctive is its traditional wet-hulling process (Giling Basah), a method unique to Indonesia. After depulping and an overnight fermentation, farmers partially dry the parchment to about 50% moisture. Collectors then continue drying to around 25% before hulling, and the coffee is finally brought down to 12–13% moisture for export. This careful process results in a cup with low acidity, heavy body, and deep earthy character that sets Sumatran coffees apart from those grown anywhere else in the world.
